Processing Spicy Oyster Sauce Crab can actually be done by anyone. This nautical food protein makes the typical recipe for Peranakan cooking oyster sauce even more interesting. Ingredients

- 5 large fresh crabs
- 5 tablespoons oyster sauce
- 3 tablespoons of tomato sauce
- 15 pieces of cayenne pepper, puree according to taste
- ½ teaspoon ground pepper
- salt to taste
- enough sugar
- enough water
Seasoning
- 3 cloves of garlic, puree
- 6 shallots, puree
- 2 red chilies, remove seeds, puree
- 3 cm ginger, bruised
- 1 lemongrass stick, bruised
- 2 cm galangal, bruised
- 3 bay leaves
- oil, for sauteing
How to make
- Wash the crab thoroughly and boil the crab in boiling water until cooked. Remove and drain.
- Sauté the seasoning which is mashed with a little oil in the pan until fragrant.
- Add ginger, lemongrass, and galangal that have been crushed. Add also bay leaves.
- Pour enough seasoned sauté and wait for it to boil.
- Add the boiled crab into the sautéed spices. Add tomato sauce, oyster sauce, and cayenne pepper. Also add pepper powder, sugar and salt while stirring until well blended. Wait until cooked.
