Ingredients
- 1 lb. ground beef
- 5 cups frozen tater tots
- 1 cup onion chopped
- 1 green bell pepper chopped
- 1 1 oz. packet of taco seasoning
- 1 cup red enchilada sauce
- 1 10 oz can of tomatoes and chilies
- 1 15 oz can of black beans, drained and rinsed
- 1 12 oz bag frozen corn
- 3 cups Mexican blend shredded cheese
- optional sour cream and cilantro for garnish
Instructions
- Preheat oven to 375 degrees and spray a 9x13 casserole dish with non-stick spray
- In a large skillet over medium heat cook onions and bell pepper until tender.
- Then add the brown beef unit cooked and no longer pink then drain fat and return to skillet.
- Combine taco seasoning, tomatoes and chilies, enchilada sauce, black beans and frozen corn to skillet and cook for 10 minutes.
- Stir in two cups of cheese and stir until melted
- Transfer beef mixture into the casserole dish. Line tater tots across the top and bake for 30-35 minutes.
- Remove from oven and sprinkle the remaining cup of cheese over the top. Bake another 5 minutes or until cheese is melted and bubbly. Garnish with cilantro and sour cream if desired.
