Turkey, Rice and Cranberry Casserole

This scrumptious casserole is the perfect way to utilize your holiday leftovers!

Yield: 6-8 servings

Ingredients


  • Package Knorr Selects White Cheddar Broccoli Rice prepared per package
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 cup sliced mushrooms
  • 1 cup fresh green beans, cut into 1” pieces
  • 3 cloves garlic, minced
  • 1/4 teaspoon pepper
  • ½ teaspoon dried thyme
  • 3 cups cut up leftover turkey or rotisserie chicken
  • 1 cup dried cranberries
  • 1 cup shredded white cheddar cheese
  • ¼ cup pine nuts


Instructions


  1. Preheat oven to 350. Spray a baking dish with non-stick cooking spray.
  2. Prepare Knorr Selects per package instructions and set aside.
  3. Add oil to a large skillet over medium heat.
  4. Add green beans, onion and mushrooms and sauté 5 minutes. Stir in garlic, salt, pepper, and thyme. Continue to cook for 1-2 minutes. Add turkey and cranberries and cook and additional 2-3 minutes.
  5. Combine mixture with prepared rice then transfer to baking dish. Top with cheese and pine nuts.
  6. Cover with foil and bake for 15 minutes. Remove foil and bake an additional 5 minutes or until cheese begins to bubble.
